Red Lamingtons


For the sponge
  • 1 and 1/3 cups coconut flour

  • 1 tbsp cornflour

  • 1 tsp baking powder

  • 1/4 cup butter, at room temperature

  • 3/4 cup coconut sugar

  • 2 tsps vanilla extract

  • 2 eggs at room temperature

  • 1/2 cup milk (125 ml)

For the coating
  • 1 cup icing sugar

  • 1/2 cup cocoa powder

  • 50 grams dark chocolate, finely chopped

  • 1/2 cup boiling water

  • 3 cups desiccated coconut

Beat the butter, sugar. Add vanilla, eggs. Sift in the flour, baking powder and cornflour. Fold to combine and then gradually the milk. Bake 25-30mins until golden brown. Allow the cake to cool and cut into squares. Once the cake has cooled make the icing. Combine the sugar, coco powder and chocolate in a bowl, then pour the boiling water over the mixture and whisk. Dip each piece of sponge into the icing & finally dip with desiccated coconut.
